Zucchini Cheese Saute

Zucchini Cheese Saute

3 zucchini, cut into bite sized pieces
2 cups whole kernel corn
1 medium onion, chopped
1 medium green bell pepper, coarsely chopped
1 medium tomato, coarsely chopped
1 tablespoon olive oil
2 teaspoons sugar
1 1/2 pounds Monterey Jack cheese, cubed

Combine zucchini, corn, onion, green pepper, tomato, and vegetable oil in a saucepan. Cover. Cook over medium heat until tender, about 10 minutes.

Add the sugar and stir to mix. Add cheese on top, but do not stir. Cover, and continue cooking until cheese is melted.

We eat this with rice and tortillas. Also, I put salsa on it. But then, I put salsa on everything!
