Fast Strawberry Shortcake

Strawberries, trimmed and quartered

1/3 cup granulated sugar
1 cup chilled heavy cream
1/4 cup sour cream
3 Tablespoons confectioners sugar
1 teaspoon vanilla
biscuits (when I'm doing this the fast-and-easy way, I make mine using the recipe on the side of the Bisquick box)

Toss strawberries with granulated sugar in a large bowl and let stand 5 minutes. Gently press strawberries with fork to help release their juices, being careful not to crush them too hard. Chill for an hour or so.


Beat together heavy cream, sour cream, confectioners sugar and vanilla in a bowl with an electric mixer until it thickens.

Split biscuits with a fork. Top with strawberries and juices then with whipped cream.


One of my favorite summertime treats, hands down!
