Coleslaw

Coleslaw

1 medium head cabbage, shredded
2 small red onions, diced
1 1/2 cups finely grated carrots
2 stalks celery, chopped
1 cup sugar
1 cup white vinegar
3/4 cup vegetable oil
1 1/2 Tablespoons salt
2 Tablespoons dry mustard
black pepper

Combine vegetables and sugar in a large bowl.

Combine remaining ingredients in a saucepan and bring to a boil. Pour over cabbage. Mix, then chill and serve cold.

I've made this a day ahead and it tastes just fine. There are rarely leftovers but when there are they taste even better a day or two later!
