Squash Fry

Oh yeah, the summer squash are here! You can count on lots of zucchini and summer squash recipes. Whatever's coming out of the garden on any particular day is pretty much what we eat during the summer. I love going out to pick our dinner. And it's squash time, so... bring on the squash recipes!!

Squash Fry

3 summer squash, cubed
1 egg, beaten
1/2flour
1/3 cup cornmeal
1 teaspoon baking powder
1 teaspoon salt
1 clove minced garlic
1 medium onion, grated
vegetable oil

Cook squash in boiling water until tender. Drain and mash squash, then add egg and mix well. Add remaining ingredients and mix until combined.

Drop mixture by level tablespoon into hot oil. Cook until golden brown, turning once. Drain on paper towels.
