Fried Green Tomatoes

Yes, we really do make these! They're delish, too!

Fried Green Tomatoes

1 cup flour
1 teaspoon salt
1 teaspoon pepper
green tomatoes, sliced 1/2 inch thick
1 cup crushed saltine crackers
2 eggs, beaten
1/2 cup butter

Combine the flour, salt and pepper. Place the crushed saltine crackers in a separate bowl, the eggs in a third bowl.

Melt the butter in a large skillet over medium heat. Dip each tomato slice in the egg, then in the flour. Dip the floured slice into the egg again (quickly!) before dipping it into the cracker crumbs. Place the coated tomato slices in the hot skillet, and fry until golden brown on each side. This takes about seven or eight minutes per slice. Drain on paper towels before serving.

They are so good you'll plant extra tomatoes just to have green ones to fry!
