Yes, this is as yummy as it sounds!
Apple Butterscotch Pudding
1 cup brown sugar
1 T. cornstarch
¼ cup butter
1 cup water
1 1/3 cups flour, sifted
2 ½ t.baking powder
½ t.salt
2/3 cup brown sugar
¼ cup butter, melted
½ cup milk
2 ½ cups sliced apples sprinkled with additional 1/3 cup brown sugar
Combine 1 cup brown sugar, cornstarch, 1/4 cup butter in saucepan over medium heat. Add water and cook over low heat until syrup thickens. Pour mixture into a lightly buttered baking dish.
Combine flour, baking powder, salt and 2/3 cup brown sugar. Add melted butter and milk and stir to mix. Then add remaining ingredients and stir. Pour batter over syrup. Place in preheated 350-degree oven and bake for 30 minutes or until apples are tender.
